PSB, Feta and Harissa Orzo Pasta Bake

Ingredients:

 

1 tbsp olive oil

1 white onion - diced

1 large garlic clove - puree

Tin of chopped tomatoes

½ can of water

1 ½ tbsp harissa paste

½ tsp chilli Flakes

150g Orzo pasta

180g PSB - ends trimmed

Feta 40g - crumbled

Fresh Flat leaf parsley - Finely chopped

 

 

Method:

 

  1. Heat olive oil in oven proof dish and add white onion and soften for 10 mins.
  2. Add garlic, harissa & chilli flakes and cook for further 5 minutes.
  3. Add chopped tomatoes, water, PSB, salt & pepper and mix
  4. Put into 200c oven for 15 minutes with the lid on.
  5. Then cook for a further 5 minutes with the lid off until PSB is tender and orzo is cooked through.
  6. Finish with crumbled feta, & chopped parsley and serve!
