Broccoli and Whipped Feta salad with Chimichurri dressing

Ingredients:

 

1 tbsp olive oil

1 Broccoli head - separated into Florets

Pinch Salt & Black pepper

 

150g Greek yogurt

80g Feta cheese

 

2 tbsp olive oil

10g fresh Flat Leaf Parsley

½ garlic clove - puree

½ tsp smoked paprika

½ tsp oregano

¼ tsp chilli Flakes

Pinch Salt & black Pepper
 

 

 

Method:

 

  1. Add Broccoli Florets, oil, salt & pepper to baking tray and roast in 200c oven for 15 mins until tender & charred.
  2. Blend Greek Yogurt & Feta in food processor until whipped (or in small bowl mashed up with a fork)
  3. To make Chimichurri dressing mix olive oil, garlic, herb, spices, salt & pepper in small bowl.
  4. To serve - spoon whipped feta onto base of plate, topped with roasted Broccoli & Chimichurri sauce.
