Warm Roasted Sprout Caesar Salad

Ingredients:

 

500g whole sprouts - prepped trimmed

1 tbsp olive oil

Pinch Salt & black pepper

40g parmesan - finely grated

60g Greek Yogurt

50g Mayonnaise

10g anchovies in olive oil - drained & finely chopped

Pinch Salt / pepper

Dash of Worcestershire sauce

1/2 garlic clove - pureed

 

Method:

 

  1. Preheat oven at 220c.

  2. Add prepped sprouts, olive oil & seasoning to a large baking tray and put in oven for 15 mins.

  3. Remove sprouts when tender and charred.

  4. In a separate small bowl mix dressing ingredients and then add to warm sprouts and mix thoroughly. 

  5. Serve topped with pumpkin seeds & some extra parmesan shavings.
