Charred Sweetheart Cabbage with Cheese Sauce & Breadcrumbs

Ingredients:

 

1 tbsp olive oil

Pinch salt & Black pepper

2 sweetheart cabbages - cut in quarters lengthways

200ml milk

1 ½ tbsp plain Flour

20g butter

1 tsp smoked paprika

½ tsp chilli Flakes

50g  Red Leciester cheese - grated

Pinch Salt / pepper

Panko Breadcrumbs

20g Butter

Zest of ¼ lemon

¼ fresh red chilli diced finely

5g Fresh flat leaf parsley


 

Method:

 

  • Heat 1 tbsp oil to a large hot frying pan and char sweetheart cabbages on the 2 cut edges until black & tender (approx 2 minutes each side).

  • In a small frying pan toast the breadcrumbs with butter, lemon, chilli & parsley until golden - stirring continuously & then remove from heat.

  • To make cheese sauce melt butter in a medium saucepan and add ?our to make a roux, stir to cook ?our and then add seasoning. Add the milk a little at a time and once incorporated add cheese and mix until thickened

  • To serve lay cabbage quarters onto a plate and pour over cheese sauce and top with toasted breadcrumbs.
