Creamy Savoy Cabbage with Pancetta & Parmesan

Ingredients:

 

½ Savoy cabbage - washed and finely sliced

100g diced pancetta/ bacon lardons

1 tbsp olive oil

1 white onion - finely sliced

100ml Double Cream

1 tbsp wholegrain mustard

30g Parmesan - grated

 

 

Method:

 

  1. Heat a large frying pan & cook pancetta/bacon until softened.
  2. Remove pancetta/bacon from pan and set aside.
  3. Add 1 tbsp olive oil to the same pan and cook white onion for 5 minutes until tender. 
  4. Add savoy cabbage and cook until tender.
  5. Add the cooked bacon lardons, parmesan, cream and mustard and mix thoroughly.
  6. Serve in a bowl/dish.
