Roasted Sweetheart Cabbage

Deliciously sweet, crisp and pointy Sweetheart cabbage (also known as Pointed or Hispi) is rich in Vitamin C and good pre-biotics, which keep the gut and immune system healthy.

Cabbages are full of phytochemicals and should be a part of your daily diet. Not only does this help build a healthy immune system to fight off viruses, it also helps your body recover from illness more quickly, so eat your cabbage!

 

Ingredients

  • 1 Sweetheart (Pointed) cabbage, quartered
  • ½ tsp Ground Coriander
  • ½ tsp Ground Cumin
  • 1 tsp Chilli Flakes
  • 1 tbsp Oil
  • 100g Feta Cheese, small chunks (optional)
  • 1 tbsp Natural yoghurt (optional)
  • Salt and Pepper


    Instructions
  1. Preheat oven to 200c
  2. Place cabbage quarters in a colander and rinse thoroughly
  3. Arrange the cabbage in a tray and drizzle over the oil to coat as much of the cabbage as possible
  4. Spring over the spices and season to taste with salt and pepper
  5. Put in the oven and roast for 20-25 minutes until the cabbage is tender to eat
  6. Serve on its own or sprinkled with small chunks of Feta Cheese or a dollop of natural yoghurt
  7. Enjoy!
