Indian-style Cauliflower

  • 1 Large Cauliflower, cored and cut into 1 inch Florets
  • 1 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1 tsp Curry powder
  • 1 tsp Turmeric powder
  • Salt & freshly ground black Pepper
  • 1 tsp finely grated peeled Ginger
  • 1 tsp finely grated Lime zest




  1. Preheat Oven to 240°C
  2. In a bowl mix together the Oil, Coriander seeds, Cumin seeds, Curry powder and Turmeric in a large bowl and mix together.
  3. Add the Cauliflower and seasoning to the bowl and toss to ensure even coverage.
  4. Arrange in a single layer in a baking tray making sure to scrape any extra seasoning from the bowl over the Cauliflower.
  5. Roast for around 10-15mins until Cauliflower is brown around edges, crisp and tender.
  6. Transfer to a serving dish and sprinkle with the ginger and lime zest.
  7. Serve warm and enjoy!
