Leek, potato and chestnut filo pie

Delicious meat-free alternative for the festive season, featuring in season Leeks and other festive favourites.
Ingredients -
• 3 medium leeks chopped roughly and washed
• 300g Baby potatoes , boiled and sliced about 1cm thick
• 180 g cooked chestnuts
• 3 banana shallots sliced
• 3 garlic gloves chopped
• 300ml double cream
• 4 leaves of filo pastry
• ½ block of butter, melted
• 1 dessert spoon of chopped sage
• 1 packet of Boursin herb and garlic soft cheese
• Salt and pepper
After topping the filling with filo pastry, cook in a pre-heated over at 180°c for 20 mins or until golden and crispy.
