Broccoli & Red Cabbage Slaw

Slaw Ingredients -
 

- 360g julienned broccoli stalks
- 240g small broccoli florets
- 120g julienned carrots
- 120g shredded red cabbage
- 30g thinly sliced red onion
- 60g toasted sunflowers seeds, reserve some for garnish
- 40g dried cranberries, reserve some for garnish
- Coleslaw Dressing (see below)
 


Coleslaw Dressing Ingredients -
 

- 90g Mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon Mustard
- 1 tbsp Maple Syrup
- Freshly ground Salt & Pepper




Method -

1. In a large bowl, combine the broccoli stems, florets, carrots, cabbage, onion, sunflower seeds and cranberries.
2. In a medium bowl, whisk together the mayo, apple cider vinegar, mustard, maple syrup, salt and pepper.
3. Pour the dressing into the large bowl with all the ingredients and mix well, ensuring everything is coated.
4. Garnish with the reserved sunflower seeds and cranberries and serve.
5. Enjoy!
