Peanut, Chilli and Brussels Sprouts Stir-Fry

Ingredients –

  • 2 tbsp dark Soy Sauce
  • 3 tbsp Peanut Butter (crunchy is best but smooth would work fine)
  • Juice of 1 Lime
  • Sesame Oil for stir-frying
  • 1 Brown Onion, finely sliced
  • 2 Garlic cloves, crushed
  • 2 tsp grated fresh Ginger
  • 300g Brussels Sprouts (halved if large)
  • 300g Straight to Wok Udon Noodles or Pad Thai Rice Noodles
  • 2 tsp Crispy Chilli in Oil
  • 4 tbsp water

 

Method –

  1. Mix the peanut butter, soy sauce and lime juice with 3 tbsp water in a bowl. Set aside for later.
  2. Heat the sesame oil in a wok or high-sided frying pan. Add the onion, then fry for a few minutes until soft
  3. Add the garlic, ginger and crispy chilli to the pan and fry for another 30 seconds.
  4. Next add in the Brussels Sprouts and stir-fry for 4-5 minutes or until the Sprouts become tender and slightly charred
    Add a splash of water to stop things from sticking during cooking
  5. Then add the cooked noodles, tossing until warmed
  6. Pour over the peanut sauce, tossing until coated well
  7. Serve in bowls, top with coriander or chopped peanuts if you wish
  8. Enjoy!
