Boxing Day Bubble and Squeak

Ingredients –

150g cabbage sliced

150 carrot diced

150 diced broccoli

150g leftover (HAHA) pigs in blankets chopped

2 cloves of garlic, crushed

600g roast potatoes mashed up or mashed potato

80 g of whatever cheese is left on your cheese board, grated

Salt and pepper

2 eggs beaten

Tbsp seasoned flour
 

To serve

1 egg

Pulled or chopped ham hock


 

Method –

1.Preheat oven to 180°C

2.In a frying pan over a medium heat, sauté the onions, garlic, carrot, cabbage and broccoli in 1 tablespoon of olive oil until lightly caramelised.

3. Next throw in the chopped pigs in blankets, fry for a further 2 minutes.

4.Tip the contents into a bowl and add in your potato of choice and cheese.  Season with salt and pepper to taste and mix enough so it holds together when shaped into a ball.

5.Form 8 – 9 equal sized cakes from the mixture by rolling into a ball and flattening off the top and bottom. At this point it's easier to cover and refrigerate the balls to allow them to chill and firm up a little.

6.Remove from the fridge.

7.Preheat a greased frying pan.

8.Roll each cake in seasoned flour, tapped to remove excess. Then into the beaten egg and straight into the frying pan. Fry on both sides till golden and place onto an oven tray and top with 30g of supermarket bought pulled or chopped sliced ham.

9.Cook in the oven until warmed through (around ten minutes).

10.Serve topped with fried or poached egg and enjoy the perfect brunch.
