Firecracker Cauliflower

Cauliflower Bites

•300g small cauliflower florets

•Flour for dusting

•Oil for deep frying


•30g plain flour

•100ml water

•30g corn flour

•¼  tsp chilli flakes

•½ tsp paprika

•Pinch of salt

•Generous pinch of baking powder


Firecracker sauce

•50g Sriracha

•½ tsp chilli flake or red pepper flake if you prefer it less spicy

•½ tsp sea salt

•1 tsp paprika

•2 cloves of garlic

•30ml red wine vinegar

•30g light brown sugar

•30ml water mixed with ½ tsp corn flour





•To make the firecracker sauce combine all ingredients except the water and corn flour mixture

•Bring to the boil and stir to dissolve the sugar.

•Add in the corn flour water mix and bring back to the boil until thickened…next

•Mix all the ingredients for the batter in a bowl and whisk to combine into a smooth batter

•Dust the florets with the flour then drop the dusted florets into the batter and deep fry 10 at a  time in 190? oil for around 3 minutes or until light brown. Once fried place on some kitchen towel to remove excess oil.

•Tip the deep fried cauli into the pan of sauce, stir to coat them with the sauce evenly. Serve and enjoy.
